Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

1 red bell pepper, sliced

1 cup snap peas

3 tablespoons vegetable oil (divided)

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce (low sodium recommended)

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon water

1 teaspoon sesame oil

Cooked rice or noodles, for serving

Sesame seeds and green onions, for garnish (optional)

Instructions

Marinate the Beef: In a small bowl, combine the sliced flank steak with 2 tablespoons of soy sauce, cornstarch, and water. Mix well and let it marinate for about 10 minutes while you prepare the vegetables.

Prepare the Vegetables: Rinse and cut the broccoli into small florets, slice the red bell pepper, and trim the ends of the snap peas. Set all aside.

Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single layer. Cook for about 2-3 minutes until browned but not fully cooked, then remove and set aside.

Cook the Veggies: In the same skillet, add the remaining tablespoon of oil. Add the minced garlic and ginger, stirring quickly to avoid burning—about 30 seconds. Add the broccoli, red bell pepper, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

Combine and Sauce: Return the beef to the skillet. Add the remaining soy sauce, oyster sauce, and sesame oil. Stir everything together to coat the beef and vegetables in the sauce. Cook for an additional 2 minutes until the beef is cooked through and everything is well combined.

Serve: Spoon the beef and broccoli stir-fry over cooked rice or noodles. Garnish with sesame seeds and chopped green onions, if desired.
