5 medium-sized banana peppers

1 cup cream cheese, softened

1/2 cup shredded cheddar cheese

1/4 cup fresh chives, finely chopped

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

Salt and pepper, to taste

1/2 cup cooked and crumbled bacon (optional)

Olive oil spray

Prepare the Peppers: Preheat your oven to 375°F (190°C). While the oven is heating, carefully slice the tops off the banana peppers and remove the seeds. Use gloves if preferred, as banana peppers can have some heat.

    Make the Filling: In a medium mixing bowl, combine the softened cream cheese, shredded cheddar cheese, chopped chives, garlic powder, onion powder, and a pinch of salt and pepper. If you’re using bacon, fold it in now for an extra savory kick.

      Stuff the Peppers: Using a small spoon or piping bag, fill each banana pepper generously with the cheese mixture, packing it in snugly.

        Bake: Take a baking dish and lightly spray it with olive oil. Arrange the stuffed banana peppers upright in the dish. Lightly spray the tops of the peppers with olive oil for a crispy finish. Bake in the preheated oven for about 15 minutes or until the peppers are tender and the cheese is bubbly and starting to brown.
