1.5 lbs baby potatoes (halved)

2 tablespoons olive oil

4 cloves garlic (minced)

1 teaspoon dried oregano

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

¼ teaspoon black pepper

½ cup grated Parmesan cheese

Fresh parsley (chopped, for garnish)

Instructions
 

Prep the Potatoes: Wash and halve the baby potatoes. Pat them dry with a paper towel to ensure they crisp up nicely in the air fryer.

    Make the Garlic Mixture: In a large mixing bowl, combine the olive oil, minced garlic, dried oregano, onion powder, smoked paprika, salt, and black pepper. Stir until it forms a smooth paste.

      Coat the Potatoes: Add the halved potatoes to the bowl with the garlic mixture. Toss them until the potatoes are evenly coated with the garlic oil blend.

        Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes. This step ensures the potatoes will start cooking immediately.

          Air Fry the Potatoes: Place the coated potatoes in the air fryer basket in a single layer. You may need to do this in batches, depending on the size of your air fryer. Cook at 400°F (200°C) for 15 minutes. Shake the basket halfway through the cooking time for even crispiness.

            Add Parmesan: After 15 minutes, open the air fryer and sprinkle the grated Parmesan cheese over the potatoes. Continue to cook for an additional 5 minutes, or until the cheese is melted and golden brown.
