Ingredients

1 medium head of cauliflower, cut into florets

1/2 cup all-purpose flour (or gluten-free flour)

1/2 cup unsweetened almond milk (or any milk of choice)

1 tsp garlic powder

1 tsp onion powder

1/2 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

1 cup buffalo sauce (adjust according to heat preference)

1 tbsp olive oil

Fresh parsley, for garnish (optional)

Celery sticks, for serving

Blue cheese or ranch dressing, for serving

Instructions

Prep the Cauliflower: Start by washing and cutting the cauliflower into bite-sized florets. Make sure they are roughly the same size for even cooking.

Make the Batter: In a large mixing bowl, combine the flour, garlic powder, onion powder, paprika, salt, and black pepper. Slowly pour in the almond milk, whisking until you have a smooth batter. It should be thick enough to coat the cauliflower but fluid enough to stick.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are fully coated. Shake off any excess batter and place them on a plate or tray.

Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

Arrange for Frying: Lightly spray the air fryer basket with cooking spray or brush it with olive oil to prevent sticking. Carefully place the coated cauliflower florets in a single layer, ensuring they don’t touch each other for optimal crispiness.

Air Fry: Cook the cauliflower in the air fryer at 400°F (200°C) for 12-15 minutes, shaking the basket halfway through. You want them to be golden brown and crispy.

Toss in Buffalo Sauce: Once the cauliflower is cooked, transfer it to a large bowl while it’s still hot. Drizzle the buffalo sauce and the remaining olive oil over the florets. Toss gently until all pieces are well coated in sauce.

Final Air Frying: Return the sauced cauliflower to the air fryer basket and cook for an additional 2-3 minutes at the same temperature to set the sauce.

Serve: Once done, remove the cauliflower from the air fryer. Garnish with chopped fresh parsley if desired. Serve hot with celery sticks and a side of blue cheese or ranch dressing for dipping.
