Ingredients

1 medium head of cauliflower, cut into bite-sized florets

½ cup all-purpose flour (or gluten-free flour)

½ cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup cold water (adjust as needed)

½ cup sweet chili sauce

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

Optional: chopped green onions and sesame seeds for garnish

Instructions

Prepare the Cauliflower: Begin by washing and cutting the cauliflower into bite-sized florets. Make sure they are similar in size for even cooking.

Make the Batter: In a large mixing bowl, combine the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually whisk in cold water until you have a smooth batter that coats the back of a spoon. The consistency should be similar to pancake batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are fully coated. Allow any excess batter to drip off.

Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes.

Air Fry the Cauliflower: Arrange the battered cauliflower florets in a single layer in the air fryer basket, making sure there’s space between them to allow for even cooking. You may need to work in batches depending on the size of your air fryer.

Cooking Time: Air fry the cauliflower for about 12-15 minutes, shaking the basket halfway through to ensure even cooking. They should be golden brown and crispy when done.

Prepare the Sauce: While the cauliflower is cooking, make the sauce by whisking together the sweet chili sauce, soy sauce, and rice vinegar in a small bowl.

Combine and Toss: Once the cauliflower is done air frying, transfer it to a large bowl and pour the sweet chili sauce mixture over it. Toss gently to coat all the florets evenly.

Serve: Garnish with chopped green onions and sesame seeds if desired. Serve immediately while hot for the best texture!
