Ingredients
  

2 cups rolled oats

1 cup almond butter (or your preferred nut butter)

1/4 cup honey or maple syrup

1/4 cup unsweetened shredded coconut

1/2 cup dark chocolate chips (preferably dairy-free)

1/2 cup whole almonds, roasted and unsalted

1 teaspoon vanilla extract

1/4 teaspoon sea salt

Instructions
 

Prepare a Baking Sheet: Line a baking sheet with parchment paper and set aside. This will be for letting the oat bites firm up after forming them.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, shredded coconut, and sea salt. Mix them together until well combined.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

        Combine Mixtures: Pour the wet ingredients into the dry ingredient mixture. Stir until all the oats are thoroughly coated and the mixture is sticky. If it seems too dry, add a splash of water or a little more almond butter.

          Fold in Chocolate and Almonds: Gently fold in the dark chocolate chips and whole almonds until evenly distributed throughout the mixture.

            Form the Bites: Using your hands, scoop about 1 tablespoon of the mixture and roll it into a ball. Place it on the prepared baking sheet. Repeat this process with the remaining mixture until all bites are formed.

              Chill: Refrigerate the oat bites for at least 30-60 minutes, allowing them to firm up.

                Serve and Enjoy: Once the oat bites are firm, enjoy them as a quick snack, dessert, or post-workout treat! Store leftovers in an airtight container in the fridge for up to one week.
