Apple Baked Oatmeal

2 large apples, peeled and diced (Granny Smith or Honeycrisp work well)

2 cups rolled oats

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1/4 cup brown sugar (packed)

2 cups milk (dairy or non-dairy)

2 large eggs

1 tsp vanilla extract

1/4 cup maple syrup (optional, for extra sweetness)

1/2 cup walnuts or pecans, chopped (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9x13-inch baking dish lightly with cooking spray or butter.

    Prepare the Apple Mixture: In a large bowl, combine the diced apples with the ground cinnamon and a pinch of salt. Toss well to ensure the apples are coated evenly. Set aside.

      Mix Dry Ingredients: In another bowl, mix together the rolled oats, baking powder, nutmeg, and salt. Stir in the brown sugar and nuts (if using).

        Combine Wet Ingredients: In a separate bowl, whisk together the milk, eggs, vanilla extract, and maple syrup (if using).

          Combine Everything: Pour the wet ingredients into the dry oat mixture and stir until combined. Then gently fold in the apple mixture and any additional dried fruit if you are including them.

            Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly.
