Apple Cider Cupcakes

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

2 large eggs

1 tsp vanilla extract

¾ cup apple cider

1 cup peeled and finely diced apples (about 1 large apple)

3-4 cups powdered sugar (to taste)

2 tbsp apple cider

1 tsp vanilla extract

A pinch of salt

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a standard cupcake pan with paper liners.

    Mix Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined. Set aside.

      Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and granulated sugar together until it’s light and fluffy, about 2-3 minutes.

        Add Eggs and Vanilla: Beat in the eggs, one at a time, followed by the vanilla extract, mixing until just combined.

          Combine Wet and Dry Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the apple cider. Start and end with the flour mixture, mixing just until combined. Fold in the diced apples gently.
