For the crust:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

1 teaspoon ground cinnamon

For the cheesecake layer:

16 oz (2 packages) cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

½ cup sour cream

For the apple topping:

2 medium apples, peeled, cored, and thinly sliced (Granny Smith is a great choice)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

¼ cup caramel sauce (store-bought or homemade)

Preheat the Oven: Preheat your oven to 325°F (160°C). Line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Crust: In a medium bowl, mix together the graham cracker crumbs, melted butter, granulated sugar, and ground cinnamon until well combined. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and let it cool while you prepare the cheesecake layer.

      Prepare the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth. Gradually add the granulated sugar and continue mixing until creamy. Add the eggs one at a time, mixing well after each addition. Then, incorporate the vanilla extract, ground cinnamon, and sour cream, mixing until everything is fully combined and smooth.

        Assemble the Layers: Pour the cheesecake mixture over the cooled crust, spreading it evenly.

          Prepare the Apple Topping: In a separate bowl, toss the thinly sliced apples with brown sugar, ground cinnamon, and lemon juice until well coated. Arrange the apple slices on top of the cheesecake layer in a decorative pattern.
