2 cups rolled oats

1 cup all-purpose flour

½ cup brown sugar, packed

½ cup granulated sugar

1 tsp baking powder

1 tsp ground cinnamon

½ tsp salt

¾ cup unsalted butter, melted

1 large egg

1 tsp vanilla extract

2 cups peeled and diced apples (Granny Smith or Honeycrisp)

1 tsp lemon juice

1 tsp ground nutmeg (optional)

½ cup chopped walnuts or pecans (optional)

½ cup raisins (optional)

Additional cinnamon for sprinkling

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish or line it with parchment paper for easy removal.

    Prepare Apple Filling: In a bowl, toss the diced apples with lemon juice, ½ tsp cinnamon, nutmeg (if using), and raisins (if using). Set aside to let the flavors meld.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking powder, 1 tsp cinnamon, and salt. Mix until well incorporated.

        Combine Wet Ingredients: In another bowl, whisk together the melted butter, egg, and vanilla extract until well combined.

          Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir until just mixed; the batter will be somewhat thick.

            Add Apples and Nuts: Gently fold in the apple mixture and nuts (if using) into the oatmeal batter until evenly distributed.

              Spread into the Pan: Pour the mixture into the prepared baking dish and spread evenly. Press it down lightly with a spatula.

                Sprinkle Topping: Sprinkle with additional cinnamon and a small drizzle of melted butter over the top (optional) for added flavor.
