Ingredients

4 large whole wheat tortillas

2 ripe avocados, peeled and pitted

8 slices of cooked bacon

1 cup fresh spinach or arugula

1 large tomato, sliced

1/4 cup mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon lemon juice

Salt and pepper, to taste

Optional: Red pepper flakes for a touch of heat

Instructions

Prepare the Avocado Spread: In a medium bowl, mash the avocados with a fork until creamy. Stir in lemon juice, salt, and pepper to taste. If you want a spicy kick, add a pinch of red pepper flakes.

Cook the Bacon: In a frying pan, cook the bacon over medium heat until crispy. Drain on paper towels to remove excess grease.

Assemble the Wraps: Lay a tortilla flat on a clean surface. Spread an even layer of the avocado mixture over the tortilla, leaving a small border around the edges.

Add the Fillings: Place two slices of bacon on the avocado spread. Top with a handful of fresh spinach or arugula and a few slices of tomato.

Roll it Up: Starting from one side, carefully roll the tortilla tightly over the fillings. Tuck in the sides as you go to keep the ingredients contained.

Slice and Serve: Once wrapped, slice the tortilla in half diagonally and serve immediately. Enjoy your delicious avocado BLT wrap with a side of chips or a light salad!
