2 ripe avocados

1 cup diced cherry tomatoes

1/2 cup canned black beans, rinsed and drained

1/2 cup corn kernels (canned or frozen, thawed)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 lime (juiced)

1 tsp ground cumin

Salt and pepper to taste

1/2 cup crumbled feta cheese (optional)

1/4 cup Greek yogurt or sour cream (for drizzling)

Instructions
 

Prepare the Avocados: Slice the avocados in half lengthwise and remove the pit. Carefully scoop out a small portion of the avocado flesh with a spoon to create more room for the filling. Set aside the scooped avocado in a mixing bowl.

    Mix the Filling: In the bowl with the scooped avocado, add the diced cherry tomatoes, black beans, corn, red onion, cilantro, lime juice, ground cumin, salt, and pepper. Gently mix all the ingredients until well combined. Taste and adjust seasoning as needed.
