2 cups cooked chicken, shredded or diced

1 ripe avocado, diced

1/4 cup Greek yogurt (or mayo for a creamier texture)

1 tablespoon Dijon mustard

1 tablespoon lime juice

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

8 large romaine or butter lettuce leaves, washed and dried

Instructions
 

In a large mixing bowl, combine the shredded chicken, diced avocado, Greek yogurt, Dijon mustard, lime juice, garlic powder, and onion powder.

    Gently fold the mixture until the avocado is mostly smooth, but small chunks remain for texture.

      Season with salt and pepper to taste. Adjust lime juice and mustard for extra tang as desired.

        Add the cherry tomatoes, red onion, and cilantro to the bowl. Carefully mix until evenly distributed through the chicken salad.

          Prepare the lettuce cups: Lay out the washed lettuce leaves on a serving platter.
