1 ½ cups all-purpose flour

1 tbsp baking powder

½ tsp salt

¼ tsp black pepper

½ cup shredded cheddar cheese

½ cup diced ham (cooked)

½ cup milk

¼ cup unsalted butter, melted

2 large eggs

1 tbsp Dijon mustard

1 tbsp chopped chives (optional)

Cooking spray or muffin liners

Instructions
 

Preheat the oven to 375°F (190°C) and prepare a muffin tin by either greasing it with cooking spray or lining it with muffin liners.

    Whisk the dry ingredients: In a large mixing bowl, combine the all-purpose flour, baking powder, salt, and black pepper. Mix until well combined.

      Add the cheese and ham: Fold in the shredded cheddar cheese and diced ham gently into the dry mixture ensuring they are evenly distributed.

        Prepare the wet ingredients: In a medium bowl, whisk together the milk, melted butter, eggs, Dijon mustard, and chopped chives until well blended.

          Combine wet and dry ingredients: Pour the wet ingredient mixture into the dry ingredients, gently folding until just combined. Be careful not to over-mix; it’s okay if there are a few lumps.

            Fill the muffin tin: Spoon the batter into each muffin cup, filling them about ¾ full.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes or until the tops are golden brown and a toothpick inserted into the center of a muffin comes out clean.

                Cool and serve: Remove the muffin tin from the oven and let it cool in the pan for about 5 minutes. Carefully transfer the muffins to a wire rack to cool completely.

                  Store or pack: These muffins can be served warm or stored in an airtight container for up to 3 days at room temperature. They make a great snack or lunch box addition!
