Ingredients
  

4 medium flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked chicken, shredded (or beans for a vegetarian option)

1 cup bell peppers, diced (any color)

1/2 cup red onion, thinly sliced

1/4 cup corn (canned or frozen)

1 tsp cumin

1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

2 tbsp olive oil (for cooking)

Optional toppings: sour cream, salsa, guacamole, fresh cilantro

Instructions
 

Prep Your Filling: In a mixing bowl, combine the shredded chicken (or beans), both cheeses, diced bell peppers, corn, and red onion. Add in the cumin, chili powder, garlic powder, and season with salt and pepper. Mix until all ingredients are well incorporated.

    Heat the Pan: Place a large skillet over medium heat. Add 1 tablespoon of olive oil and allow it to heat up for about a minute.

      Assemble the Quesadilla: Place one tortilla in the skillet. On half of the tortilla, generously spoon the filling mixture. Fold the tortilla over to create a half-moon shape.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown and the cheese starts to melt. Carefully flip the quesadilla using a spatula, add the remaining olive oil to the skillet, and cook the other side for an additional 3-4 minutes.

          Repeat: Remove the cooked quesadilla from the skillet and place it on a cutting board. Repeat steps 3-4 for the remaining tortillas and filling.

            Slice & Serve: Once all quesadillas are cooked, slice them into triangles. Serve warm with optional toppings like sour cream, salsa, guacamole, or fresh cilantro.
