Bacon-Wrapped Jalapeño Chicken Bites

1 pound chicken breast, cut into bite-sized pieces

8 large jalapeños, halved and seeds removed

8 ounces cream cheese, softened

1 cup shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

16 slices of bacon, cut in half

Fresh cilantro, for garnish (optional)

Cooking spray or olive oil for greasing

Prepare the Jalapeños: Preheat your oven to 400°F (200°C). Carefully slice the jalapeños in half lengthwise and remove the seeds and membranes. Set aside.

    Make the Filling: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, and smoked paprika. Mix well until everything is incorporated and creamy.

      Fill the Jalapeños: Spoon the cheese mixture into each jalapeño half. Make sure they are generously filled for maximum flavor.

        Wrap with Bacon: Take one half slice of bacon and wrap it around each stuffed jalapeño, starting at one end and spiraling down to the other, securing it as best as possible. If necessary, you can use a toothpick to hold the bacon in place.

          Prepare for Baking: Lightly grease a baking sheet with cooking spray or olive oil to prevent sticking. Place the bacon-wrapped jalapeño chicken bites on the prepared sheet, seam side down.

            Bake: Place the baking sheet in the preheated oven and bake for 25-30 minutes, or until the bacon is crispy and the chicken is cooked through (internal temperature should reach 165°F or 75°C).

              Garnish and Serve: Once they’re out of the oven, let them cool for a few minutes. If desired, garnish with fresh cilantro. Serve warm, and enjoy the spicy, creamy, and savory flavors!
