1 cup apple cider

1 cup all-purpose flour

1/2 cup whole wheat flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 large egg

1/4 cup unsweetened applesauce

1/4 cup vegetable oil

1 tsp vanilla extract

1/2 cup powdered sugar (for coating, optional)

Extra cinnamon sugar for topping (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray or lightly coat with oil.

    Reduce the Apple Cider: In a small saucepan over medium heat, bring the apple cider to a boil. Reduce the heat and let it simmer for about 10-15 minutes, or until it has reduced to about 1/2 cup. Allow it to cool slightly while you prepare the batter.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

        Combine Wet Ingredients: In another bowl, combine the granulated sugar, brown sugar, and egg. Whisk until combined, then add the applesauce, vegetable oil, vanilla extract, and the reduced apple cider. Mix until smooth.

          Combine Wet and Dry Mixtures: Pour the wet ingredients into the dry ingredients and gently fold them together using a spatula. Be careful not to overmix; stop when just combined. The batter will be thick.

            Fill the Donut Pan: Use a piping bag or a ziplock bag with the corner snipped off to fill each donut mold about halfway full with the batter.
