Baked Chicken Parmesan Meatballs

1 pound ground chicken

1/2 cup breadcrumbs (preferably Italian style)

1/4 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

1 large egg

2 cloves garlic, minced

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1 jar (24 oz) marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Mix the Ingredients: In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, half of the mozzarella cheese, egg, minced garlic, Italian herbs, red pepper flakes (if using), salt, and pepper. Mix until all the ingredients are well incorporated.

      Form the Meatballs: Using your hands, take about 2 tablespoons of the mixture and roll into a ball, placing them on the prepared baking sheet. Ensure they are spaced about 1-2 inches apart.

        Bake the Meatballs: Bake in the preheated oven for 18-20 minutes, or until the meatballs are cooked through and golden brown.

          Add Marinara Sauce: Once the meatballs are cooked, remove the baking sheet from the oven and carefully pour marinara sauce over the meatballs.

            Add Cheese Topping: Sprinkle the remaining mozzarella cheese over the top of the meatballs and sauce. Return the baking sheet to the oven and bake for an additional 5-7 minutes until the cheese is melted and bubbly.

              Garnish and Serve: Remove from the oven, let them cool slightly, and garnish with fresh basil leaves before serving. These meatballs can be served as an appetizer, over spaghetti, or in a sub sandwich!
