Baked Chicken Parmesan with Zucchini Noodles

For the Chicken:

4 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably whole wheat)

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

For the Zucchini Noodles:

4 medium zucchinis, spiralized

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken:

      - In a shallow dish, combine breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper.

        - In another shallow bowl, beat the eggs. Dip each chicken breast into the beaten eggs, allowing excess to drip off, then coat in the breadcrumb mixture, pressing the crumbs onto the chicken to ensure even coverage.

          Bake the Chicken:

            - Place the coated chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for 20 minutes.

              - After 20 minutes, remove from the oven, spoon marinara sauce over each chicken breast, and sprinkle with mozzarella cheese.

                - Return to the oven and bake for an additional 10 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cheese is bubbly and golden.

                  Prepare the Zucchini Noodles:

                    - While the chicken is baking, heat olive oil in a large skillet over medium heat. Add the spiralized zucchini noodles, seasoning with salt, black pepper, and Italian seasoning.

                      - Sauté for about 3-4 minutes or until the zucchini is slightly tender but still has a bite (al dente). Remove from heat.

                        Serve:

                          - Plate the zucchini noodles as a base. Top with a baked chicken breast, garnishing with fresh basil leaves. Serve with additional marinara sauce on the side, if desired.
