Before diving into the cooking process, preheat your oven to 400°F (200°C). Preheating is crucial because it ensures that the nachos cook evenly and thoroughly. An adequately heated oven will allow the cheese to melt perfectly while the chicken and vegetables achieve the right level of doneness. This step can significantly affect the overall texture and taste of the dish.

Ingredients

2 cups cooked chicken, shredded (preferably rotisserie)

1 bell pepper (red, yellow, or green), thinly sliced

1 small onion, thinly sliced

2 tablespoons olive oil

1 teaspoon taco seasoning

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

1/2 teaspoon black pepper

1 bag (10 oz) tortilla chips

2 cups shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 can (15 oz) black beans, drained and rinsed

1 jalapeño, sliced (optional for heat)

1/2 cup fresh cilantro, chopped (for garnish)

1/2 cup sour cream (for serving)

1/2 cup guacamole (for serving)

Salsa (for serving)

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C).

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the sliced bell pepper and onion, sautéing for about 5-7 minutes until softened and slightly caramelized.

Season Chicken: Add the shredded chicken to the skillet with the sautéed vegetables. Pour in the taco seasoning, smoked paprika, garlic powder, salt, and pepper. Stir well to combine, cooking for another 3-4 minutes until everything is heated through.

Prepare Baking Dish: On a large baking sheet or in a 9x13 inch baking dish, spread a generous layer of tortilla chips across the bottom.

Layer Ingredients: Top the chips with the chicken and vegetable mixture, spreading it evenly. Sprinkle the black beans over the top, then generously sprinkle the cheddar and Monterey Jack cheeses over everything.

Bake Nachos: Place the baking sheet or dish in the preheated oven. Bake for about 10-15 minutes, or until the cheese is melted and bubbly.

Add Toppings: Remove the nachos from the oven and top with sliced jalapeños (if using) and fresh cilantro.

Serve: Serve immediately, accompanied by sour cream, guacamole, and salsa on the side for dipping.
