Baked Feta Pasta Reinvented

8 oz (225g) uncooked penne pasta

8 oz (225g) feta cheese block

2 cups cherry tomatoes, halved

3 cups fresh spinach, roughly chopped

4 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 tsp red pepper flakes (adjust to taste)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Zest and juice of 1 lemon (optional)

Preheat the Oven: Start by preheating your oven to 400°F (200°C).

    Prep the Baking Dish: In a large baking dish (or oven-safe skillet), combine the halved cherry tomatoes, chopped spinach, and minced garlic. Drizzle with the olive oil, then sprinkle with red pepper flakes, salt, and pepper. Toss everything together until well coated.

      Add Feta: Make a space in the center of the dish and place the block of feta cheese. Drizzle the feta with a little more olive oil and sprinkle with salt and pepper.

        Bake: Place the dish in the oven and bake for 25-30 minutes, or until the tomatoes are blistered and the feta is soft and slightly browned.

          Cook the Pasta: While the feta and tomatoes are baking, bring a large pot of salted water to a boil. Cook the penne pasta according to package instructions until al dente. Drain and set aside.

            Combine Ingredients: Once the feta and tomatoes are done, remove the baking dish from the oven. Using a fork, gently mash the feta and mix it with the tomatoes and garlic to create a creamy sauce. Add in the cooked pasta and stir to combine, ensuring the noodles are well coated.

              Add Spinach and Season: Fold in the chopped spinach until it wilts slightly. Adjust the seasoning with more salt, pepper, or red pepper flakes as desired.

                Serve: Transfer to serving plates, sprinkle with grated Parmesan cheese, garnish with fresh basil leaves, and, if desired, add lemon zest and juice for a bright finish.
