Baked Feta Pasta with Cherry Tomatoes

300g (10.5oz) pasta (your choice of penne, fusilli, or spaghetti)

200g (7oz) block of feta cheese

500g (1.1lbs) cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup extra virgin olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Zest of 1 lemon (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Baking Dish: In a large oven-safe baking dish, combine the halved cherry tomatoes and minced garlic. Drizzle with 2 tablespoons of olive oil, then sprinkle with oregano, red pepper flakes, salt, and pepper. Toss to combine.

      Add Feta: Place the block of feta cheese in the center of the baking dish, surrounded by the tomatoes. Drizzle the remaining olive oil over the feta cheese and sprinkle a little more salt and pepper on top.

        Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the tomatoes are bursting and the feta is soft and starting to brown.

          Cook the Pasta: While the feta and tomatoes are baking, cook your pasta according to the package instructions in salted water until al dente. Reserve 1 cup of pasta water, then drain the pasta.

            Combine: Once the feta and tomatoes are done, remove the baking dish from the oven. Use a fork to mash the feta cheese and mix it with the tomatoes, creating a creamy sauce. Add the drained pasta to the baking dish and stir to combine, adding reserved pasta water as needed to loosen the sauce.

              Garnish and Serve: Serve the baked feta pasta warm, garnished with fresh basil leaves and lemon zest for an extra touch of brightness.
