4 medium-sized Yukon Gold potatoes

200g (7 oz) block of feta cheese

1/4 cup olive oil

2 cloves garlic, minced

1 tsp dried oregano

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and black pepper, to taste

1 cup cherry tomatoes, halved

Fresh parsley, chopped for garnish

Lemon wedges for serving

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Potatoes: Scrub the Yukon Gold potatoes clean, then poke holes in them with a fork to allow steam to escape. Bake them in a foil-lined baking dish for about 30-35 minutes, until tender.

      Make the Feta Mixture: While the potatoes are baking, combine olive oil, minced garlic, dried oregano, dried thyme, red pepper flakes (if using), salt, and black pepper in a small bowl. Mix well to combine.

        Add Feta and Tomatoes: In a medium baking dish, arrange the halved cherry tomatoes. Place the block of feta cheese in the center and drizzle the olive oil mixture over both the feta and tomatoes.

          Bake Feta and Tomatoes: After the potatoes have baked for 30-35 minutes, remove them from the oven. Carefully slice each potato lengthwise and gently press down to open them up. Pour the baking dish with the feta and tomatoes into the oven and bake for an additional 20 minutes, until the feta is soft and slightly golden.
