Ingredients

For the Meatballs:

1 pound ground beef (or turkey for a lighter option)

1/2 cup breadcrumbs (panko for extra crunch)

1/4 cup grated Parmesan cheese

1/4 cup finely chopped fresh basil

1 large egg, beaten

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional)

For the Peach Sauce:

2 large ripe peaches, diced (peeled if desired)

1 tablespoon olive oil

1 tablespoon honey (or maple syrup)

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

      Make the Meatball Mixture:

In a large bowl, combine the ground beef, breadcrumbs, grated Parmesan, chopped basil, beaten egg, garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Mix until just combined; avoid overmixing for tender meatballs.

          Form the Meatballs:

Using your hands or a small ice cream scoop, form the mixture into meatballs about 1.5 inches in diameter. Place them on the prepared baking sheet, spacing them evenly.

              Prepare the Peach Sauce:

In a medium bowl, combine the diced peaches, olive oil, honey, balsamic vinegar, thyme, salt, and pepper. Toss gently to coat the peaches well.

                  Combine and Bake:

Once the meatballs are formed, spoon the peach mixture over the top of each meatball, spreading it out evenly.

                      Bake:

Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the meatballs are cooked through (internal temperature should reach 165°F / 74°C) and the peaches are softened and caramelized.

                          Serve:

Remove from the oven and let cool for a few minutes. Serve the meatballs warm, drizzled with any extra sauce, and garnish with additional fresh basil if desired. Enjoy with a side of rice or a fresh salad for a complete meal!
