When preparing your Cozy Baked Pumpkin French Toast Squares, one crucial step is ensuring that the bread cubes are thoroughly coated in the custard mixture without breaking them apart. To achieve this, use a gentle folding method. Start by adding the cubed bread to the bowl with your pumpkin mixture. Instead of stirring aggressively, which can lead to mushy bread, use a spatula or a large spoon to lift the bread from the bottom, gently turning it over. This method helps to evenly distribute the custard while maintaining the integrity of the bread cubes. Aim for even coating, ensuring each piece is soaked in the delicious mixture, allowing for maximum flavor absorption during baking.

Ingredients

1 loaf of thick-cut brioche or challah bread, cut into 1-inch cubes

1 cup canned pumpkin puree (not pumpkin pie filling)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/2 cup brown sugar

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 tablespoon unsalted butter, for greasing the baking dish

Optional toppings: maple syrup, whipped cream, chopped pecans, or powdered sugar

Instructions

Preheat & Prepare: Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with unsalted butter to prevent sticking.

Cube the Bread: Place the cubed brioche or challah bread into a large mixing bowl and set aside.

Make the Custard Mixture: In a separate bowl, whisk together the canned pumpkin puree, eggs, whole milk, heavy cream, brown sugar, vanilla extract, pumpkin pie spice, ground cinnamon, and salt until well combined.

Combine Bread and Custard: Pour the custard mixture over the cubed bread. Using a spatula or wooden spoon, gently fold to ensure all the bread cubes are coated. Let the mixture sit for about 15-20 minutes to allow the bread to absorb the custard.

Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 35-40 minutes, or until the squares are set in the center and golden brown on top.

Cool and Serve: Allow the baked pumpkin French toast squares to cool for about 10 minutes before cutting into squares. Serve warm with your choice of maple syrup, whipped cream, chopped pecans, or a dusting of powdered sugar for an extra treat.
