2 large sweet potatoes

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon paprika

½ teaspoon chili powder

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes

1 cup shredded cheese (cheddar or a dairy-free alternative)

½ cup sliced jalapeños (fresh or pickled)

½ avocado, sliced (for topping)

¼ cup chopped fresh cilantro (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Sweet Potatoes: Wash and scrub the sweet potatoes. Slice them into ¼-inch thick rounds.

      Season the Rounds: In a large bowl, toss the sweet potato slices with olive oil, garlic powder, cumin, paprika, chili powder, salt, and pepper until evenly coated.

        Bake the Sweet Potatoes: Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until they are tender and slightly crispy.

          Assemble the Nacho Rounds: Once the sweet potato rounds are done, remove them from the oven. Top each round with a spoonful of black beans, corn, diced tomatoes, and jalapeños. Sprinkle shredded cheese generously on top.

            Melt the Cheese: Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
