Baked Zucchini Tomato Gratin

Ingredients
  

3 medium zucchinis, thinly sliced

3 large ripe tomatoes, thinly sliced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup fresh breadcrumbs (can use store-bought or homemade)

3 cloves garlic, minced

1/4 cup fresh basil, chopped

1 tsp dried oregano

Salt and pepper to taste

3 tablespoons olive oil

1 tablespoon balsamic vinegar

1/2 teaspoon red pepper flakes (optional for a kick)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Veggies: In a large mixing bowl, toss the sliced zucchinis and tomatoes with olive oil, balsamic vinegar, minced garlic, oregano, salt, pepper, and red pepper flakes if using. Let it marinate for about 10 minutes.

      Layer the Vegetables: In a greased 9x12 inch baking dish, start layering the zucchini and tomato slices alternately, creating a beautiful overlapping pattern. Continue until all the vegetables are used, finishing with a layer of zucchini on top.

        Combine Toppings: In a separate bowl, mix the breadcrumbs, mozzarella cheese, Parmesan cheese, and chopped basil. This will be the topping that gives a nice crust to the gratin.

          Assemble the Gratin: Evenly spread the breadcrumb mixture over the layered vegetables, making sure to cover them entirely.

            Bake: Place the baking dish in the preheated oven and bake for about 30-35 minutes, or until the gratin is bubbly and the top is golden brown.

              Cool & Serve: Remove from the oven and let it cool for about 5 minutes before serving. Garnish with additional fresh basil if desired.
