Balsamic Grilled Portobello Burgers

Ingredients
  

4 large Portobello mushroom caps

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

4 whole grain burger buns

4 slices of fresh mozzarella cheese

1 cup fresh arugula

1 large ripe tomato, sliced

Optional: pesto sauce for spreading

Instructions
 

Marinate the Mushrooms: In a mixing bowl, combine balsamic vinegar, olive oil, minced garlic, oregano, salt, and black pepper. Whisk together until well blended.

    Prepare Portobello Caps: Clean the Portobello mushroom caps by gently wiping them with a damp cloth. Remove the stems and gills with a spoon if desired. Add the caps to the marinade, making sure they are evenly coated. Let them marinate for at least 30 minutes, turning them halfway through.

      Preheat the Grill: Preheat your grill or grill pan to medium-high heat.

        Grill the Mushrooms: Place the marinated Portobello caps on the grill. Cook for about 5-7 minutes per side, or until they are tender and have nice grill marks. In the last minute of grilling, place a slice of mozzarella cheese on each cap to melt.

          Toast the Buns: While the mushrooms are grilling, slice the whole grain burger buns in half and lightly toast them on the grill until golden brown.

            Assemble the Burgers: On the bottom half of each toasted bun, place a grilled Portobello mushroom cap with melted mozzarella. Top with a handful of fresh arugula and a slice of ripe tomato. Add pesto sauce if desired for extra flavor.

              Serve: Place the top half of the burger bun on each assembled burger. Serve immediately and enjoy your delicious Balsamic Grilled Portobello Burgers!
