Ingredients
  

2 boneless, skinless chicken breasts

2 tablespoons olive oil

Salt and pepper, to taste

2 ripe peaches, sliced

4 cups mixed greens (arugula, spinach, and romaine)

1/2 cup crumbled feta cheese

1/3 cup walnuts or pecans, toasted

1/4 cup red onion, thinly sliced

1/4 cup balsamic vinegar

1 tablespoon honey

1 teaspoon Dijon mustard

Instructions
 

Prepare the Chicken:

    - Preheat grill or stovetop skillet over medium-high heat.

      - Rub chicken breasts with olive oil and season with salt and pepper.

        - Grill or cook the chicken for about 6-7 minutes per side until cooked through and no longer pink in the center. Use a meat thermometer to ensure it reaches an internal temperature of 165°F (75°C).

          - Once cooked, remove the chicken from heat and let it rest for 5 minutes before slicing.
