8 oz (225g) pasta (penne or fusilli works best)

1/4 cup balsamic vinegar

1/4 cup olive oil

2 cloves garlic, minced

1 tsp Dijon mustard

1 tsp honey (or maple syrup for a vegan option)

Salt and pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup feta cheese, crumbled (optional)

Fresh basil, for garnish

Toasted pine nuts, for serving (optional)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil and add the pasta. Cook according to package instructions until al dente. Drain and set aside to cool slightly.

    Prepare the Dressing: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, Dijon mustard, honey, salt, and pepper until well combined and emulsified.
