Ingredients

2 large ripe bananas, mashed

2 cups rolled oats

1 cup milk (dairy or non-dairy)

1/2 cup chopped walnuts

1/4 cup honey or maple syrup

1/2 cup Greek yogurt (or a plant-based alternative)

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon salt

Optional: 1/4 cup chocolate chips or dried fruits for extra flavor

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch or 8x8-inch baking dish with cooking spray or oil.

Combine Wet Ingredients: In a large mixing bowl, combine the mashed bananas, milk, honey (or maple syrup), Greek yogurt, and vanilla extract. Mix well until smooth and creamy.

Mix Dry Ingredients: In a separate bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until evenly mixed.

Combine Everything: Gradually add the dry mixture to the wet ingredients, mixing gently until well incorporated. Fold in the chopped walnuts and any optional ingredients like chocolate chips or dried fruits.

Transfer to Baking Dish: Pour the oatmeal mixture into the prepared baking dish, spreading it evenly with a spatula.

Bake: Bake in the preheated oven for 30-35 minutes. The top should be lightly golden, and a toothpick inserted in the center should come out clean.

Cool & Slice: Once baked, remove from the oven and let it cool for about 10 minutes. Cut into squares and enjoy!

Storage: Store leftovers in an airtight container in the refrigerator for up to a week. These squares can be reheated in the microwave for a quick breakfast or snack.
