BBQ Chicken Stuffed Sweet Potatoes

2 large sweet potatoes

2 cups cooked shredded chicken (can use rotisserie chicken)

1 cup barbecue sauce (your favorite brand)

1 cup shredded cheddar cheese

½ cup green onions, finely chopped

¼ cup cilantro, chopped (optional)

1 teaspoon garlic powder

Salt and pepper, to taste

Olive oil (for drizzling)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Sweet Potatoes: Wash the sweet potatoes thoroughly and prick them with a fork several times to allow steam to escape. Rub a little olive oil on the skin and sprinkle with salt.

      Bake the Sweet Potatoes: Place the sweet potatoes on a baking sheet and bake in the preheated oven for about 45-60 minutes or until they are tender and easily pierced with a fork. Cooking time may vary depending on the size of the potatoes.

        Prepare the BBQ Chicken Filling: While the sweet potatoes are baking, in a mixing bowl, combine the shredded chicken with barbecue sauce, garlic powder, salt, and pepper. Mix until all the chicken is evenly coated.

          Remove and Cool Sweet Potatoes: Once the sweet potatoes are done baking, remove them from the oven and let them cool for a few minutes until they are easy to handle.
