2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 tablespoon olive oil

Salt and pepper, to taste

1 cup cooked chicken, shredded (grilled or rotisserie chicken works great)

1/2 cup BBQ sauce (your favorite brand)

1/2 cup shredded cheese (cheddar or gouda)

1/4 cup green onions, chopped (for garnish)

1 tablespoon fresh cilantro, chopped (optional, for garnish)

Instructions
 

Preheat Oven: Preheat your oven to 400°F (200°C).

    Prepare Sweet Potatoes: On a large baking sheet, toss the sweet potato cubes with olive oil, salt, and pepper until evenly coated. Spread them out in a single layer.

      Roast the Sweet Potatoes: Roast in the preheated oven for 25-30 minutes, or until fork-tender and slightly caramelized. Make sure to toss them halfway through for even cooking.

        Combine Chicken and BBQ Sauce: While the sweet potatoes are roasting, combine the shredded chicken with the BBQ sauce in a mixing bowl. Stir until the chicken is well coated with the sauce.

          Assemble the Bites: Once the sweet potatoes are done, remove them from the oven. Top each sweet potato cube with a spoonful of the BBQ chicken mixture. Sprinkle shredded cheese generously on top of the chicken.

            Melt the Cheese: Return the baking sheet to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
