BBQ Chicken Sweet Potato Bowls

2 medium sweet potatoes, peeled and cubed

1 lb (450g) boneless, skinless chicken breasts

1 cup BBQ sauce (your favorite brand)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (frozen or canned)

1 avocado, sliced

½ cup red onion, diced

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Instructions
 

Prepare the Sweet Potatoes:

    - Preheat your oven to 425°F (220°C).

      - Toss the cubed sweet potatoes in a bowl with 1 tablespoon of olive oil, garlic powder, smoked paprika, salt, and pepper. Spread them out in a single layer on a baking sheet.

        - Roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized, flipping halfway through.

          Cook the Chicken:

            - While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat.

              - Season the chicken breasts with salt and pepper. Add them to the skillet and cook for about 5-7 minutes on each side, or until they are fully cooked and no longer pink in the center.

                - Pour the BBQ sauce over the chicken, reduce the heat to low, and let it simmer for another 5 minutes, allowing the chicken to absorb the flavors.

                  Assemble the Bowls:

                    - Once the chicken is cooked, shred it using two forks or chop it into bite-sized pieces.

                      - In serving bowls, layer the roasted sweet potatoes, shredded BBQ chicken, black beans, and corn.

                        - Top each bowl with slices of avocado, diced red onion, and fresh cilantro.
