Beef Lettuce Wraps with Peach Glaze

1 lb ground beef

1 cup diced peaches (fresh or canned)

3 tablespoons soy sauce

2 tablespoons hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1/2 teaspoon garlic powder

1/2 teaspoon ginger powder

1/4 teaspoon red pepper flakes (optional)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

1 head of butter or romaine lettuce, leaves separated and rinsed

1/4 cup chopped green onions

1/4 cup chopped cilantro (optional)

Crushed peanuts or cashews (for garnish)

Prepare the Peach Glaze: In a small saucepan, combine diced peaches, soy sauce, hoisin sauce, rice vinegar, sesame oil, garlic powder, ginger powder, and red pepper flakes (if using). Cook over medium heat until the peaches break down and the mixture thickens slightly, about 5-7 minutes.

    Cook the Beef: In a large skillet, heat over medium-high heat. Add ground beef and cook until browned, stirring occasionally to break it up, about 5-7 minutes. Drain any excess fat.

      Combine Beef and Glaze: Once the beef is fully cooked, pour the peach glaze over it. Mix well and allow it to simmer for an additional 3-5 minutes. If the mixture seems too runny, add the cornstarch slurry (cornstarch mixed with water) while stirring until the desired thickness is reached.
