1 lb (450g) beef tenderloin, thinly sliced

2 cups mushrooms, sliced (preferably cremini or button)

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup beef broth

1 cup sour cream

2 tablespoons all-purpose flour

2 tablespoons Dijon mustard

1 tablespoon Worcestershire sauce

1 teaspoon smoked paprika

2 tablespoons olive oil

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Egg noodles or rice, for serving

Prepare the Beef: In a medium bowl, season the sliced beef with salt, pepper, and smoked paprika. Toss to ensure even coating.

    Sauté the Beef: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the seasoned beef slices in batches, ensuring not to overcrowd the pan. Sauté for about 2-3 minutes until browned but not fully cooked. Remove beef from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add another tablespoon of olive oil if needed. Add the chopped onion and sauté until translucent (about 2-3 minutes). Add garlic and sliced mushrooms, cook for an additional 5-7 minutes until mushrooms are browned and have released their moisture.

        Make the Sauce: Sprinkle the flour over the mushroom mixture and stir to combine. Gradually pour in the beef broth, stirring continuously to avoid lumps. Add the Dijon mustard, Worcestershire sauce, and fresh thyme. Bring the mixture to a gentle simmer.

          Finish the Stroganoff: Once the sauce has thickened slightly, reduce heat to low and stir in the sour cream until fully incorporated. Add back the browned beef, simmering on low for 3-5 minutes until the beef is cooked through and the sauce is heated.

            Serve: Taste and adjust seasoning with more salt, pepper, or thyme as desired. Serve hot over cooked egg noodles or rice, and garnish with freshly chopped parsley.
