For the Chia Jam:

2 cups mixed berries (strawberries, blueberries, raspberries)

2 tablespoons maple syrup (adjust based on berry sweetness)

2 tablespoons chia seeds

1 tablespoon lemon juice

1/4 teaspoon vanilla extract

For the Bars:

1 cup rolled oats

1 cup almond flour (or any nut flour)

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

Instructions
 

Prepare the Chia Jam:

    - In a medium saucepan over medium heat, combine the mixed berries, maple syrup, and lemon juice.

      - Cook for about 5–7 minutes, stirring gently until the berries break down and create a sauce.

        - Remove from heat and stir in the chia seeds and vanilla extract. Allow the mixture to cool and thicken for about 15 minutes.

          Preheat the Oven:

            - Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

              Mix the Bar Base:

                - In a large bowl, combine the rolled oats, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, baking powder, and salt. Mix well until the ingredients are fully incorporated and form a crumbly dough.

                  Assemble the Bars:

                    - Press about two-thirds of the oat mixture into the bottom of the prepared baking dish, creating an even layer.

                      - Spread the cooled chia jam evenly over the base, ensuring it covers the entire surface.

                        - Sprinkle the remaining oat mixture on top of the chia jam, pressing gently to hold it in place.

                          Bake:

                            - Bake in the preheated oven for 25–30 minutes, or until the edges start to turn golden brown and the top appears set.
