Ingredients

2 cups all-purpose flour

1/2 cup almond flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup cold unsalted butter, cubed

1/2 cup milk (or buttermilk)

1 large egg

1 teaspoon almond extract

1/2 cup sliced almonds (plus extra for topping)

1/4 cup coarse sugar (for sprinkling on top)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, almond flour, granulated sugar, baking powder, and salt until well combined.

Cut in the Butter: Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Combine Wet Ingredients: In a separate bowl, whisk together the milk, egg, and almond extract until fully combined.

Form the Dough: Pour the wet ingredients into the dry ingredients and gently mix until just combined. Be careful not to overmix. Fold in the sliced almonds until evenly distributed throughout the dough.

Shape the Scones: On a lightly floured surface, turn the dough out and gently knead it a couple of times until it comes together. Pat it into a disc about 1-inch thick. Cut the disc into 8 equal wedges and transfer them to the prepared baking sheet. You can also use a scone cutter for round scones.

Add Toppings: Sprinkle the tops of the scones with coarse sugar and additional sliced almonds for extra texture and crunch.

Bake: Bake in the preheated oven for 15-20 minutes or until the scones are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Remove the scones from the oven and let them cool on the baking sheet for 5 minutes before transferring to a wire rack. Serve warm with jam, honey, or clotted cream for a delightful treat!
