1 cup rice flour

1/2 cup all-purpose flour

1 cup coconut milk

1/2 cup sugar

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup grated fresh coconut (or desiccated coconut)

2 large eggs

2 tablespoons melted butter (plus more for greasing)

Banana leaves (optional, for lining the baking dish)

Cheese, sliced (optional, for topping)

Sweetened macapuno (coconut sport), for garnish (optional)

Instructions
 

Prepare your baking dish: If using banana leaves, soak them in hot water to soften. Line a round or square baking dish (about 8 inches) with the leaves, allowing some overhang, and grease the leaves with melted butter. If not using banana leaves, just grease the dish directly.

    Mix dry ingredients: In a mixing bowl, combine the rice flour, all-purpose flour, sugar, baking powder, and salt. Whisk until well combined.

      Combine wet ingredients: In another bowl, whisk together the coconut milk, eggs, and melted butter until smooth.

        Combine both mixtures: Gradually pour the wet ingredients into the dry mixture, stirring gently just until you achieve a smooth batter.

          Add coconut: Carefully fold in the grated coconut until evenly distributed throughout the batter.

            Pour into the baking dish: Transfer the batter into the prepared baking dish, making sure it is spread evenly.

              Optional toppings: If using, arrange slices of cheese on top of the batter for a savory twist.

                Bake: Preheat your oven to 375°F (190°C) and bake the bibingka for about 25-30 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

                  Cool and serve: Allow the bibingka to cool slightly in the pan for 5-10 minutes. Remove it from the pan using the overhanging banana leaves, if used. Cut into squares or wedges and serve warm. Top with sweetened macapuno if desired.
