Blackberry Balsamic Glazed Pork

2 lbs pork tenderloin

2 cups fresh blackberries

1/2 cup balsamic vinegar

1/4 cup honey

2 tbsp Dijon mustard

3 cloves garlic, minced

1 tsp fresh rosemary, chopped (or 1/2 tsp dried)

1 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

Fresh rosemary sprigs for garnish (optional)

Instructions
 

Marinate the Pork: In a bowl, whisk together balsamic vinegar, honey, Dijon mustard, minced garlic, rosemary, salt, and pepper. Reserve 1/4 cup of this marinade for glazing later. Place the pork tenderloin in a resealable plastic bag or a shallow dish, and pour the remaining marinade over the pork. Seal or cover, and marinate in the refrigerator for at least 1 hour, or preferably overnight.

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Pork: In a large oven-safe skillet, heat olive oil over medium-high heat. Remove the pork from the marinade, allowing the excess to drip off. Add the tenderloin to the skillet and sear for 3-4 minutes on each side, until golden brown.

        Prepare the Glaze: In a small saucepan over medium heat, combine the reserved marinade and fresh blackberries. Bring to a simmer, mashing the blackberries gently with the back of a spoon. Cook for about 5-7 minutes until the mixture thickens slightly. Remove from heat.

          Roast the Pork: Once seared, pour half of the blackberry glaze over the pork. Place the skillet in the preheated oven and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

            Baste and Finish: About halfway through roasting, brush the pork with more of the blackberry glaze. Once done, remove the skillet from the oven and let the pork rest for 5-10 minutes before slicing.

              Serve: Slice the pork into medallions and drizzle with the remaining blackberry balsamic glaze. Garnish with fresh rosemary sprigs if desired. Pair with roasted vegetables or a fresh side salad for a complete meal.
