Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup milk (whole or buttermilk for a richer taste)

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon vanilla extract

1 cup fresh blueberries (you can use frozen, if needed)

Cooking spray or additional butter for the pan

Instructions

Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, mix the milk, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix; a few lumps are okay.

Add Blueberries: Gently fold in the blueberries, taking care not to break them apart.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat. Lightly grease with cooking spray or butter.

Cook Pancakes: Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Cook until bubbles start to form on the surface and the edges look set, about 2-3 minutes.

Flip and Finish: Carefully flip the pancakes and cook for another 1-2 minutes until golden brown and cooked through. Remove from the skillet and keep warm.

Repeat: Repeat with remaining batter, greasing the pan as needed.

Serve: Serve pancakes warm, topped with additional blueberries, maple syrup, and a dusting of powdered sugar if desired.
