8 slices of thick-cut brioche bread

1 cup fresh blueberries (plus extra for garnish)

4 oz cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract

4 large eggs

1 cup milk

1 teaspoon cinnamon

1 teaspoon nutmeg

2 tablespoons unsalted butter

Maple syrup (for serving)

Fresh mint leaves (for garnish, optional)

Prepare the Filling: In a mixing bowl, combine the softened cream cheese, powdered sugar, vanilla extract, and half of the fresh blueberries. Mash the mixture slightly with a fork so that it’s mixed well but still has some whole blueberries for texture.

    Assemble the French Toast: Take two slices of brioche bread and spread a generous amount of the blueberry cream cheese mixture between them, creating a sandwich. Repeat this for the remaining slices, making a total of four stuffed sandwiches.

      Prepare the Egg Mixture: In another bowl, whisk together the eggs, milk, cinnamon, and nutmeg until well combined.

        Coat the Sandwiches: Heat a large skillet over medium heat and add 1 tablespoon of unsalted butter. Dip each stuffed sandwich into the egg mixture, allowing it to soak for about 10 seconds on each side to absorb the mixture, then place it into the skillet.

          Cook the French Toast: Cook the stuffed sandwiches for about 4-5 minutes on each side or until they are golden brown and crispy. Add more butter as needed to grease the skillet.
