2 cups ripe heirloom tomatoes, quartered (blush varieties preferred)

1 tablespoon olive oil

1 teaspoon balsamic vinegar

1 teaspoon honey

Salt and pepper, to taste

8 oz fresh burrata cheese

1/2 cup fresh basil leaves, torn

1/4 cup pine nuts, toasted

1/2 cup panko breadcrumbs

2 tablespoons grated Parmesan cheese

1 tablespoon fresh lemon juice

Zest of 1 lemon

Prepare Tomatoes: In a mixing bowl, combine the quartered heirloom tomatoes with olive oil, balsamic vinegar, honey, salt, and pepper. Gently toss to coat the tomatoes evenly. Let them marinate for about 15 minutes to allow the flavors to meld.

    Toast Breadcrumbs: In a skillet over medium heat, add the panko breadcrumbs and toast until golden brown, stirring frequently, about 3-5 minutes. Remove from heat and mix in the grated Parmesan cheese, lemon juice, and lemon zest. Set aside.
