2 cups granulated sugar

1 cup heavy cream

1/2 cup unsalted butter

1/2 cup corn syrup

1 teaspoon vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup powdered sugar

1/4 cup milk

1 teaspoon instant coffee granules (optional, for depth)

Pinch of salt

Prepare the Pan: Line an 8x8 inch square baking dish with parchment paper, leaving some overhang for easy removal later. Grease the parchment lightly with cooking spray.

    Make the Fudge Base: In a medium saucepan, combine the granulated sugar, heavy cream, unsalted butter, corn syrup, and salt. Place the saucepan over medium heat. Stir constantly until the mixture comes to a boil.

      Cook the Mixture: Allow the mixture to boil without stirring for about 5-6 minutes, or until it reaches the soft-ball stage (approximately 235°F or 118°C on a candy thermometer). Remove from heat.

        Add Vanilla: Carefully stir in the vanilla extract and let the mixture sit for a minute until it cools slightly.

          Beat the Fudge: Using a hand mixer or stand mixer with a paddle attachment, beat the mixture on medium speed for about 5-7 minutes, or until it thickens and becomes creamy. It should start to lose its shine.

            Pour the Fudge: Quickly pour the fudge into the prepared baking dish and smooth it out with a spatula. Let it cool completely at room temperature.

              Prepare the Chocolate Ganache: In another small saucepan, heat the milk over medium heat. Once warm, remove from the heat and add the chocolate chips and instant coffee granules (if using). Stir until the chocolate is fully melted and the ganache is smooth.

                Spread the Ganache: Once the fudge has cooled and set, pour the chocolate ganache over the top, smoothing it out evenly.

                  Chill and Set: Place the dish in the refrigerator for about 2 hours to allow the ganache to set completely.

                    Serve: Once set, lift the fudge out of the pan using the parchment overhang. Cut into squares and dust with powdered sugar before serving for an extra touch!
