8 oz bow tie pasta (farfalle)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 cup bell pepper (any color), diced

½ cup red onion, finely chopped

1 cup black olives, sliced

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

½ cup olive oil

¼ cup red wine vinegar

1 tsp dried oregano

1 tsp garlic powder

Salt and pepper to taste

Cook the Pasta: Bring a large pot of salted water to a boil. Add the bow tie pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and pepper until well combined. Adjust seasoning to taste.
