Ingredients

1 ripe mango, diced

1 cup pineapple chunks (fresh or canned)

1 cup strawberries, hulled and sliced

1 medium banana, sliced

1/2 cup blueberries

1 kiwi, peeled and diced

1/4 cup shredded coconut (sweetened or unsweetened)

1 tablespoon honey (or maple syrup)

2 tablespoons fresh mint leaves, chopped

Juice of 1 lime

Instructions

Start by preparing all the fruits. Ensure they are cleaned, peeled, and diced as indicated in the ingredient list.

In a large mixing bowl, combine the diced mango, pineapple chunks, sliced strawberries, banana, blueberries, and diced kiwi. Gently toss the fruits together to avoid bruising.

In a small bowl, whisk together honey (or maple syrup) and lime juice until well combined. Adjust sweetness based on your preference.

Pour the honey-lime dressing over the mixed fruits and gently fold the mixture until the dressing evenly coats the fruit.

Sprinkle the shredded coconut and chopped mint leaves on top of the salad and give it a gentle toss to incorporate them.

Allow the fruit salad to sit for about 5 minutes, letting the flavors meld together.

Serve immediately or store in the refrigerator for up to 2 hours before serving. This salad is best enjoyed fresh!
