Ingredients

8 oz tortilla chips

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large eggs

1/2 cup diced Hatch green chilies (fresh or canned)

1/2 cup cooked and crumbled breakfast sausage (optional)

1/2 cup diced tomatoes

1/4 cup sliced green onions

1/4 cup sour cream

1 avocado, diced

Fresh cilantro for garnish

Salt and pepper to taste

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Base: Spread the tortilla chips evenly on a large baking sheet lined with parchment paper.

Add the Cheese: Sprinkle half of the cheddar and Monterey Jack cheeses over the chips, covering them generously.

Cook the Eggs: In a medium-sized skillet, crack the eggs and whisk them in a bowl. Season with salt and pepper. Over medium heat, scramble the eggs gently until they are just set but still soft.

Layer It Up: Once the eggs are scrambled, add the cooked breakfast sausage (if using) and diced Hatch chilies. Stir gently to combine.

Assemble the Nachos: Spoon the egg and Hatch chili mixture evenly over the prepared chips. Top with the remaining cheddar and Monterey Jack cheeses.

Bake the Nachos: Place the baking sheet in the preheated oven and bake for about 10-15 minutes or until the cheese is melted and bubbly.

Finish with Fresh Toppings: Remove the nachos from the oven. Top with diced tomatoes, sliced green onions, and diced avocado. Drizzle with sour cream.

Garnish: Finish with fresh cilantro leaves for an extra burst of flavor.

Serve Immediately: Serve the nachos hot, allowing everyone to dig in and enjoy!
