Ingredients

For the Brownie Crust:

1 cup unsalted butter (2 sticks)

2 cups granulated sugar

4 large eggs

1 teaspoon vanilla extract

1 cup all-purpose flour

1 cup unsweetened cocoa powder

1/2 teaspoon salt

1/2 teaspoon baking powder

For the Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened

2 cups powdered sugar

1 teaspoon vanilla extract

1 tablespoon milk (more if needed for consistency)

For Topping:

1 cup strawberries, sliced

1 cup kiwi, peeled and sliced

1 cup blueberries

1 cup pineapple, chopped

A handful of mint leaves (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 12-inch round pizza pan or line it with parchment paper.

Make the Brownie Batter: In a large saucepan over low heat, melt the butter. Once melted, remove from heat and stir in sugar, eggs, and vanilla until well combined. Add flour, cocoa powder, salt, and baking powder, and mix until just incorporated (avoid overmixing).

Bake the Brownie Crust: Pour the brownie batter into the prepared pizza pan and spread it evenly. Bake in the preheated oven for 20-25 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Remove from the oven and let it cool completely in the pan.

Prepare the Cream Cheese Frosting: In a mixing bowl, beat the softened cream cheese and butter until creamy and smooth. Gradually add the powdered sugar and beat until combined. Mix in the vanilla extract and milk to achieve a spreadable consistency.

Assemble the Pizza: Once the brownie crust has cooled completely, gently spread an even layer of cream cheese frosting over the entire top of the brownie.

Add the Toppings: Arrange the sliced strawberries, kiwi, blueberries, and chopped pineapple artistically on top of the cream cheese frosting.

Garnish & Serve: Finish with a sprinkle of fresh mint leaves on top for a touch of color and flavor. Carefully slice the brownie fruit pizza into wedges and serve immediately.

Enjoy your delicious and visually stunning Brownie Fruit Pizza!
