Buffalo Chicken Egg Rolls

2 cups shredded cooked chicken (preferably rotisserie)

1/2 cup Buffalo wing sauce (adjust to taste)

1/2 cup cream cheese, softened

1 cup shredded cheddar cheese

1/2 cup green onions, chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

12 egg roll wrappers

Oil for frying (vegetable or canola)

Optional: blue cheese or ranch dressing for dipping

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, Buffalo wing sauce, cream cheese, cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix well until all the ingredients are fully combined.

    Assemble the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you (like a diamond shape). Place about 2 tablespoons of the filling in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water on your fingers to dampen the edges and ensure they stick. Repeat with the remaining wrappers and filling.

      Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium-high heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread in; if it sizzles and bubbles, it’s ready.

        Fry the Egg Rolls: Carefully place 3-4 egg rolls into the hot oil, making sure not to overcrowd the pan. Fry them for about 3-4 minutes on each side until they are golden brown and crispy. Use a slotted spoon to remove the egg rolls from the oil and transfer them to a paper towel-lined plate to drain excess oil.

          Serve: Allow the egg rolls to cool for a couple of minutes. Serve them warm with blue cheese or ranch dressing for dipping.
