Buffalo Chicken Lasagna with a Ranch Twist

For the Buffalo Chicken:

2 cups cooked and shredded chicken

1/2 cup hot buffalo sauce (adjust to taste)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

For the Lasagna:

9 lasagna noodles (regular or no-boil)

2 cups ricotta cheese

2 cups shredded mozzarella cheese (divided)

1 cup blue cheese crumbles (optional)

1/2 cup ranch dressing

1 teaspoon dried parsley

1 teaspoon Italian seasoning

1/2 cup grated Parmesan cheese

Fresh chives or green onions for garnish (optional)

Instructions
 

Prepare the Buffalo Chicken Filling:

    - In a medium bowl, combine the shredded chicken, hot buffalo sauce, garlic powder, onion powder, olive oil, salt, and pepper. Mix until well coated. Set aside.

      Prepare the Cheese Mixture:

        - In another bowl, mix the ricotta cheese, half of the mozzarella cheese, blue cheese crumbles (if using), ranch dressing, dried parsley, Italian seasoning, salt, and pepper. Stir until smooth and well combined.

          Pre-cook the Noodles (if not using no-boil):

            - If you are using regular lasagna noodles, bring a large pot of salted water to a boil. Cook the noodles for about 8-10 minutes until al dente. Drain and lay them flat on a parchment-lined baking sheet to prevent sticking.

              Layer the Lasagna:

                - Preheat your oven to 375°F (190°C).

                  - In a 9x13-inch baking dish, spread a thin layer of the buffalo chicken mixture on the bottom.

                    - Place 3 lasagna noodles over the chicken.

                      - Spread half of the cheese mixture over the noodles, followed by another layer of buffalo chicken.

                        - Repeat with another 3 noodles, the remaining cheese mixture, and more buffalo chicken.

                          - Top with the final 3 noodles.

                            - Finish the lasagna by spreading remaining buffalo sauce on top, then sprinkle the rest of the mozzarella and Parmesan cheese evenly over the top.

                              Bake:

                                - Cover the lasagna tightly with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes or until the cheese is golden and bubbly.

                                  Serve:

                                    - Once baked, remove from the oven and let it cool for about 10 minutes before slicing. Garnish with chopped chives or green onions if desired. Serve warm with a side salad or garlic bread.
